Because ice is a sizeable ingredient in most cocktails, we insist on making our own cubes; controlling the quality of the water, the rate of dilution and aesthetic appearance. Most bars don't do this. It shows.

Sometimes our ice cubes aren't even cubes. Resident mixologist Erin Williams likes hand chipped ice for certain cocktails, pebble ice for others, and hot dog sized ice to fit in those tall Collins glasses.

We're that serious. And it's kinda fun.
